Last summer, our son and I got Covid simultaneously. My wife did not get it. So the two covid patients quarantined in our respective rooms. My wife took to the spare room and became room service to us. She would text me or call me to let me know my meal was outside the door. We were on summer break, so she didn’t have to go out.
Now, the tables are turned. I get to cook for her. I was 34 when we married, so I cooked for myself for a few years before she assumed that role. I fixed her a grilled cheese sandwich and soup today. I can fix tuna salad, and a pretty good dish I call “sausage, beans and rice”. It needs a better name, I think. But the name stuck and is now an infamous dish in our family lore. I learned it from my mother, and I should have learned the name as well. She put ground beef in it, and I subbed smoked sausage for the beef.
I bought ingredients today for an upcoming surprise meal. (4 hours later). I just finished my surprise meal. I took red beans and rice, threw in 1 pound of browned ground beef, and water and butter. I served it with Kroger brand fritos scoops and a bit of cheese on top. Our son ate it and liked it. I ate it as well. I haven’t heard my wife’s vote yet. I am calling it “Mom’s Night Off”. Why not?
When I was single, I bought beef stew in a can, Dinty Moore was the brand. It is still around. I bought some Marie Callender’s turkey pot pies for later this week. I plan to grill hamburgers, hot dogs, Earl Campbell hot links, and chicken thighs this week. Hopefully, we will do ok with me cooking. I have decided that cooking is a way we show love. We love by serving others.
Jesus washed His disciples feet. He was showing them how to love. Father in heaven, thank you for showing us what love looks like, in Jesus’ name, Amen!
